The Ingredients:

  • 1 tbsp white sesame seeds
  • Refined oil – As required

I found this recipe from a tiny pop-up kitchen in Indore. Luckily, I chased the cook down later and she said, “It’s not a recipe—it’s a mood.” I laughed, but it was true. There were a lot of fun all around but the taste of that dish stuck to my mind.

I remember its spicy and crunchy taste that lingered all my way back home. Back home, I only make it when I’m happy or trying to be. It doesn’t work on sad days. This one needs music, messy counters, and a little glitter in the air.

How to Make Fish Toast? (Step by Step Guide with Images)

Step 1: Take 500 gm of Bhetki fish fillets in a food processor or mixer grinder. Add 1 piece of fresh green chili (cut into small pieces) and 2 stems of spring onions (finely chopped) to it.

Step 2: Follow it with 1 tbsp of fresh coriander leaves and fresh mint (pudina) leaves. Also add 1 tsp of hoisin sauce, 1 tsp of oyster sauce, 1 tbsp of dark soy sauce, ½ tsp of regular table salt, and ½ tsp of crushed black pepper to it.

(Pro tip: If you do not have hoisin sauce at home, you can skip it. If you do not have both hoisin and oyster sauce at home, you may use only dark soy sauce but it will compromise the taste).

Step 3: Make a paste.

Step 4: Transfer it to a plate.

Step 5: Take 4 bread slices. Apply the fish paste on each. Spread it evenly with a knife or a spoon.

Step 6: Sprinkle a bit of white sesame seeds on it. Press them gently with the knife or spoon so that they stick nicely to the fish paste.

Step 7: Heat about 3 tbsp of refined oil in a frying pan.

Step 8: Place the coated bread slices in it one by one with the side with the fish paste facing down as shown. Fry on a medium flame for about 2 minutes.

Step 10: Cook for another minute. Take them out when they turn to a love golden brown color on both sides.

(Pro tip: Do not cook for a long time because Bhetki fish cooks quite quickly).

Step 11: Place them on a plate lined with a piece of tissue paper to absorb the excess oil.

Step 12: Your fish toasts are ready. Cut them diagonally, lay them on a plate, and serve them hot with any condiment or a hot cup of tea.

Notes

I use fresh Bhetki fillets for the best flavor in your fish paste.
Chop the spring onions finely. This will add a light crunch without overpowering the taste.
Keep the heat medium to get a crispy texture without burning. Flip bread slices when they turn golden brown for even cooking.
I place the fried slices on tissue paper. This keeps them light and crisp.
Slice the fish toasts diagonally. This adds elegance to the presentation.
