Jalebi is made with a smooth, free-flowing batter consisting of maida, ghee, and Eno, which is poured into hot oil or ghee in circular spirals and fried until golden and crispy. Meanwhile, sugar syrup flavored with cardamom and a hint of kesar is prepared to soak the fried jalebis, giving them their signature sweet, crunchy and golden form. The Ingredients:

To make the batter for jalebis:

I learned this recipe from one of my neighbors, who had come one afternoon to seek some sugar, as she had run out of it while making jalebis. I said I would give it in return for the recipe, smiling. She smiled back and happily narrated the steps to me. I thought it would be a good one to surprise my family and guests, so I wrote down every step clearly in a notebook.

I made them one fine evening when everyone was at home. My husband said it was a sweet surprise, while my two sons were overjoyed and had more than a couple of pieces at one go. I felt satisfied, happy, and grateful to my neighbor for having shared this recipe with me.

How to Make Jalebi? (Step by Step Guide with Images)

Step 1: Boil 2 cups of sugar in 1 cup of water along with a pinch of cardamom powder and kesar yellow food color in a saucepan to make the sugar syrup. Bring it to a boil and reduce it to half the height of the ladle.

Step 2: Mix 1 cup of refined wheat flour (maida) with 1 tbsp of ghee (clarified butter) and a packet of Eno in a large mixing bowl. Then add a cup of water gradually and mix nicely to make a smooth, lump-free, free-flowing batter for the jalebis.

Step 3: Heat an adequate amount of cooking oil or ghee in a frying pan or kadai over a high flame. Put a cake piping bag in a glass and pour the batter in it. Press it to make something like a cone.

Step 4: Shape the jalebis. Fry them over a medium flame for 2 to 3 minutes until golden. Remove them carefully.

Step 5: Put in the sugar syrup. Press and hold them for 5 seconds and remove.

Notes

Maintain a 2:1 ratio of sugar and water to make the sugar syrup.
Make the sugar syrup in a small, deep-bottomed saucepan to submerge the jalebis easily.
I have used Eno for better fermentation of the batter. You can use baking powder or baking soda also.
Crispiness in the jalebis depends on how well you blend the batter.
You can also use a used sauce bottle or milk packet to pour the batter and fry the jalebis.
