Mutton chops curry is made with large mutton chops cooked in a variety of powdered and whole spices. The trick to the smooth and rich gravy is the soft onions that are allowed to slow cook along with the mutton chops over a precisely controlled flame. I learned this recipe from an old lady hailing from Delhi and settled in our locality with her son. One day when we met in the local meat market buying mutton, she suggested I buy large mutton chops and cook a unique mutton dish that is non-customary to the usual mutton kosha and curry that Bengalis typically prefer. She also narrated the steps which I recorded on my phone.
Coming back home, I was a bit apprehensive about the outcome, but I followed her instructions to the last word. The end result was just fantastic – soft mutton pieces, rich flavor and texture. My husband appreciated the taste, and my two sons ate much more than they usually do, liking it very much. I felt very happy and thanked the old lady for being so kind as to share the recipe with me.
