Patta gobi aloo is made with a combination of finely sliced cabbage and small pieces of potatoes, cooked with onions, tomatoes and a variety of spices like mustard seeds, cumin seeds, asafetida, ginger, garlic, chilies and a combination of powdered spices. The Ingredients:

To wash the cabbage:

  • ½ tsp coriander seed powder
  • ½ tsp cumin seed powder
  • ¼ tsp turmeric powder
  • 1 tsp ghee (clarified butter)
  • Coriander leaves (a handful, finely chopped)

I learned this recipe from my mother in childhood. One day while she was cooking the dish at home, I asked whether I could learn it. Seeing my interest, she explained every step in detail and the use of spices in it. I wrote them down in my small diary then.

Years later, when I made this dish after marriage, my husband said it matched the taste and flavor of his mother’s cooking. I was so happy to get such a compliment. Now, my two sons often request it for dinner and I happily oblige them. Thank you, Mom!

How to Make Patta Gobi Aloo? (Step by Step Guide with Images)

Step 1: Chop ½ of cabbage finely.

Step 2: Wash it with ½ tsp of salt and ½ tsp of baking soda. Drain the water.

Step 3: Fry ½ tsp of mustard seeds, ½ tsp of cumin seeds and a pinch of asafetida (hing) in 2 tbsp of cooking oil on a medium flame for 10 seconds. Add 2 pieces of onions (medium size, roughly sliced) and fry on a medium to high flame until soft.

Step 4: Add ½ tsp of finely chopped ginger and garlic and fry until dry. Add 2 pieces of medium-sized potatoes, roughly chopped into small cubes. Mix, cover and cook on a medium flame for 5 minutes.

Step 5: Add 3 pieces of green chilies (slit from the middle), ½ tsp of salt, and ¼ tsp of turmeric powder. Mix, cover and cook on a medium flame for 5 minutes.

Step 6: Add the washed cabbage and ¼ cup of green peas. Mix them and then add 2 pieces of medium-sized roughly diced tomatoes, ½ tsp of red chili powder, ½ tsp of coriander seed powder, ½ tsp of cumin seed powder and ¼ tsp of turmeric powder. Mix, cover and cook on a medium flame for 5 minutes until done.

Step 7: Add 1 tsp of ghee (clarified butter) and a handful of finely chopped coriander leaves. Mix and cook it on a high flame for a minute. Transfer it onto a plate when done.

Notes

Always wash cabbage with salt and baking soda because it kills the bacteria in it, if any.
Ensure the cabbage does not have any moisture while adding or else the sabzi will be unnecessarily mushy.
I have used frozen green peas in the dish, which is optional. You may use fresh peas if available but par-boil them beforehand and add them with the potatoes as they take more time to cook than cabbage.
Ghee is added in the end to add to the flavor and taste of the dish. However, it is optional and can be skipped.
