Chicken achari tikka is made with fried chicken, cut into small pieces, which are marinated with yogurt, onion, ginger-garlic paste, green chili paste, coriander seed powder, Kashmiri red chili powder, dry mango powder, Kasuri Methi, garam masala powder, salt, lemon juice, and mustard oil. A special spice mix is also added which consists of a variety of whole spices, dry red chilies and curry leaves. Roasted chickpea powder is added for binding and the fried chicken pieces are finally smoked to get a tandoori-like flavor. Follow my simple recipe to learn the steps to make chicken achari tikka at home.

  • 1 tsp cooking oil or ghee
  • 1 piece hot charcoal

To garnish the chicken achari tikkis:

  • Coriander leaves (a handful, finely chopped)
  • Lemon juice (as required)

I learned this recipe from a Punjabi neighbor. When they invited us one day to the birthday party of their son, the first thing that everyone was talking about was this starter and that was what hooked me to the intense flavor and lovely aroma. I asked her whether she purchased it from the restaurant or prepared it at home. I’d never have thought that she made everything including the tikkis by herself at home. I simply wanted to have the recipe, which she sent me through WhatsApp the very next day, as she had promised.

When I prepared it the following weekend at home everybody without exception, loved it and indeed the tikkis were perfectly executed. My two sons liked them so much that they did not stop asking for more until they were chided by their father. It was absolutely the most wonderful thing for me to see everyone loving the tikkis and I also took the opportunity to thank the lady for the recipe that she had shared. I certainly consider myself very lucky to have got it.

How to Make Chicken Achari Tikka? (Step by Step Guide with Images)

Step 1: Dry roast 1 tsp of cumin seeds, ½ tsp of fennel seeds, ½ tsp of mustard seeds, ¼ tsp of fenugreek seeds, ¼ tsp of nigella seeds, 5 pieces of dry red chilies, and 10 pieces of curry leaves.

Step 2: Make a coarse powder.

Step 3: Marinate and cover 500 grams of boneless chicken with this powder along with 3 tbsp of thick yogurt, 1 piece of onion (medium size, finely chopped, juice squeezed out), 1 tbsp of ginger garlic paste, 1 tsp of green chili paste, ½ tsp of coriander seed powder, 1 tsp of Kashmiri red chili powder, 1 tsp of dry mango powder (amchur), ½ tsp of dry fenugreek leaves (Kasuri Methi), ½ tsp of garam masala powder, 2 tbsp of mustard oil, 2 tsp of lemon juice, and 1 tsp of salt.

Notes

I use boneless leg pieces to make this dish as they are very juicy. You can choose from breast pieces, though. 
You may use chaat masala in the place of amchur if not available. And, for spicier tikkis, add additional green chili paste.
I cover and keep aside the marinated boneless chicken pieces for half an hour for the authentic taste and flavor.
Roasted chickpea powder acts as a nice binding agent.
You can fry the marinated chicken pieces directly on a tawa instead of using a steel or bamboo skewer.
